Our main goal has always been to create a fine coffee. The significant certifications received over the years fill us with pride and continue to confirm that we have managed to do so.
Since the first years of our roasting business, we have always aspired to offer an exceptional and distinctive quality coffee beans, above the increasingly widespread standardization in the market. We noticed a flattening of tastes and a growing lack of attention to the uniqueness and characteristics of the raw material.

Through a constant commitment and the seriousness that distinguishes us, our coffee blends have obtained awards from two institutes of great importance: the International Taste Institute, which since 2005 has been awarding food and drink products from all over the world through a rigorous evaluation methodology focused on sensory pleasure, and the International Institute of Coffee Tasters, which since 1993 promotes the application of sensory analysis in the tasting of espresso coffee.

What are the main factors that define a fine coffee?

The quality of a fine coffee is influenced by several factors that help define its sensory profile and its overall value. We analyze in small paragraphs the importance of the individual elements in the production of a fine coffee.

The best varieties for a fine coffee

There are different varieties of coffee plants, the most common are Arabica and Robusta, each with its own taste characteristics. Arabica is more fragrant in the cup while the Robusta variety offers greater softness. The varieties of Arabica and Robusta, specifically those of high quality, are often associated with more valuable coffees.

Processing method perfect for a fine coffee

After harvesting, the beans undergo processing processes such as washing or drying in the sun. These processes affect the final taste of the coffee so a correct execution of these steps is essential for the creation of a fine coffee.

The creation of a coffee blend is a delicate and creative process, where the master roaster plays a fundamental role in skillfully balancing different varieties of beans in order to achieve the desired aromatic profile.

Here are the main steps involved in creating a mixture:
  • Selection of bean varieties: The roaster starts by selecting different varieties of coffee beans, each with its unique taste, aroma and acidity. These varieties can come from different geographical regions or types of coffee (arabica or robusta).
  • Determination of the desired taste profile: The roaster has a specific objective for the taste profile of the mixture. This could include features such as coffee body, acidity, sweetness and aromatic notes. The blend can be designed to be balanced, bold, lightweight or have specific characteristics.
  • Testing and testing: The roaster experiments with different proportions of grain varieties and roasting regimes to find the optimal combination that achieves the desired taste profile. This phase often involves continuous tasting to evaluate variations in the result.
  • Quality control: Once the final mixture is determined, strict quality standards are set to ensure consistency in each batch produced. This ensures that consumers can enjoy a consistent taste experience.
On this specific aspect Caffe Roen is a certainty of quality, certified by the countless awards by professional institutes that you find mentioned in this article and on the dedicated page.
The creation of a coffee blend is therefore a combination of sensory skills, experience and art, which aims to meet consumer preferences and offer a distinctive product on the coffee market.

Level of Roasting

Roasting influences the colour, aroma and taste of the coffee. Proper roasting can highlight the unique characteristics of the bean without burning or over-roasting the coffee. It should always be borne in mind, however, that a roasting must never be too clear because otherwise it could lead the coffee not to fully develop its aromas.

In our artisan coffee roasting, instead, we opt for a medium-dark roasting called "a tonaca di frate", typical of the Mediterranean countries, which partially reduces the aroma of coffee but at the same time lowers the acidity, increasing the viscosity and the amount of cream.

Roasting is a crucial step, during which the beans are subjected to high temperatures, transforming them from green and tasteless to aromatic grains and ready for processing. The duration and intensity of the roasting significantly affect the taste profile, with variations ranging from a light and fruity flavor to a more robust and intense. Coffee processing is therefore an art that requires attention to detail and a thorough knowledge of the characteristics of the beans, helping to ensure a unique taste experience for coffee lovers.

The importance of freshness for a fine coffee

The freshness of coffee is crucial. Freshly roasted beans retain their aromatic qualities better than those that have been roasted for a long time. For this reason, Caffe Roen cares a lot about this aspect, keeping its coffee in perfect conditions to preserve aromas and quality.

Acidity, Body and Aroma

These are key sensory aspects that define the taste profile of coffee. Acidity can give liveliness, the body refers to the feeling in the mouth and the aroma includes the distinctive smells and flavors. These three aspects are vital, to say the least, in determining whether we are dealing with a low quality coffee or a fine coffee.

Consistency of Quality

Consistency in production is crucial. The ability to maintain high standards of quality over time is an indicator of reliability and dedication of the manufacturer.

Awards and Certifications of a fine coffee

Awards in competitions or quality certifications are reliable indicators of excellence and commitment to coffee production.
Carefully considering these factors can help you identify and appreciate a fine and high quality coffee.

During 2023, we participated in the evaluations of the Superior Taste Award organized by the International Taste Institute. The most recent mixtures that have achieved significant results include:
