This particular selection of coffee we propose is produced by a small cooperative of local producers, Cahaya Comodo Sejahtera, which has been cultivating this extraordinary ’fine robusta’ for several years.
The difference compared to a normal robusta is suddendly evident on the smell, with a pleasant, very fine spicy aroma, followed on the first taste by notes of cocoa and hazelnuts that are accompanied by a soft, velvety body and very low acidity, leaving a pleasant, persistent aftertaste of dried fruit in mouth. A single-origin coffee that will surely be appreciated by those who love the strong taste of the best Robusta coffees, but also by those who, accustomed to Arabica coffees, want to discover the other side of the world of coffee!

India Arabica Malabar Monsoon

India Arabica Malabar Monsoon is the most famous indian coffee speciality in the world, made from natural arabicas, processed in the indian coastal region of Malabar, south-west in the country.
Here just the best coffee beans get the so called monsooning process, by which they get stocked in special coffee-stores, protected against rains but exposed to the warm and humid monsoon winds, that make the coffee beans swell and so changing completely their taste.
The final outcome is an intensive and definite single origin, strong and lasting, with typical spicy, malty and nutty notes, prepared as Espresso it produces a plump crema and a syrupy body, as well as low acidity.

Guatemala

Guatemala - Antigua Pastores

From the volcanic region of Antigua in Guatemala, which has always been known for the excellent quality of its coffees, we have selected this exceptional single origin of washed Arabica coffee, a special selection of the best coffees in the region, made by the Pastores farm with more than 50 years of experience.
Thanks to our artisanal drum roasting at low temperature, we were able to enhance its best characteristics, thus obtaining a rich and delicate coffee with a fine floral aroma that presents itself with a subtle and smooth light hazelnut cream and light mahogany brindle, a moderate acidity elegant and balanced that goes well with a round and enveloping body, giving way at the end to a delicate aftertaste of cherry and milk chocolate, characteristics that make it perfect for an authentic soft and delicate Italian espresso!

Pastores
department of (Beneficio) Pastores

The Pastores farm (Beneficio), founded in 1905 and currently managed by the Weissemberg family, has specialized since the 1960s in the selection and processing of the best batches of raw coffee in the Antigua region. Thanks to decades of experience and excellent coffee processing facilities, the coffee produced by this beneficio has established itself as one of the best Guatemalan coffee selections. The entire process of coffee cherries processing is carried out internally with the combination of historical wooden machinery and modern technologies, the coffee is then selected by hand by a team of 100 specialized workers to eliminate any defects. The coffee is then stored in wooden warehouses that maintain an ideal humidity level and finally shipped within 15 days from the end of processing, after being tested and approved by a team of expert tasters.

El Salvador

El Salvador - Finca Santa Isabel

The low temperature drum roasting that we daily practice in our company, allows us to fully develop all the best characteristics of this very fine coffee: a smooth hazelnut-colored crema, a very fine and balanced acidity, notes of red berry fruits, chocolate, pastry and almonds.
Given the high quality of this coffee and its limited availability, we offer it in limited edition lots of 100 numbered packs in 500g reasealable bags with gas-valve. Moreover, to keep the delicate aromas of this product at its best, we only roast each batch once the previous one has been completely sold out, so as to avoid long storage times and always delivering a product as fresh as possible.

Finca Santa Isabel
department of San Miguel - El Salvador

This extremely fine and selected coffee is produced by the finca Santa Isabel, a small planntation of 66 hectares on the slopes of the Chaparrastique volcano, in the department of San Miguel in El Salvador. Managed with passion and dedication by the family Garcia - Prieto Daglio, the plantation is located at an altitude between 1200m and 1650m and works internally in its own "beneficio" the coffee grown in the plantation, thus ensuring a very accurate processing thanks to which the coffee comes out very uniform and with a beautiful greenish color.
Among the various qualities produced in the plantation, we chose a washed Arabica of the Red Bourbon variety, characterized by a sweet and full-bodied cup and a balanced acidity.

Colombia
Finca Marlon Salcedo

After many researches and attempts we have found this washed arabica coffee of the variety Caturra, cultivated with passion and experience in the finca of Señor Marlon Salcedo and we immediately fell in love with it! Thanks to our traditional low temperature drum roasting we succeeded to bring out the best features of this wonderful coffee that we offer in resealable 500g numbered bags, in limited edition. The espresso outcoming from this coffee shows a firm and smooth hazelnut cream, at first fine floral scents immediately reach the nose and once sipped they become clear notes of rose and berries. Everything harmonizes in a cup with fine, elegant and balanced acidity and with a full round body, a fresh caress for the palate!

FINCA MARLON SALCEDO
DEPARTAMENTO DE HUILA - COLOMBIA

The coffee farm run by Marlon Salcedo and his family is located at an altitude of 1400 m in the municipality of Garzon in the central area of ??the department of Huila, Colombia’s coffee area with the highest production and quality, thanks to the soil rich in volcanic minerals and to the ideal microclimate for coffee cultivation. In the finca is cultivated the arabica caturra variety, an evolution of the Red Bourbon variety standing out for its fine citric acidity and its full-bodied cup.
